About this recipe:
Trout in foil parcels, baked
with green chillies and lemon juice. An impressive presentation, and
there's no washing up! Use red chillies if you prefer a little less
heat.

2 rainbow trout fillets

1 tablespoon olive oil

1 teaspoon freshly ground black pepper

2 cloves garlic, sliced

1 fresh green chilli, sliced

1 lemon, sliced

- Preheat oven to 200 C / Gas mark 6. Rinse fish, and pat dry.
- Rub fillets with olive oil, and season
with black pepper. Place each fillet on a large sheet of aluminium foil.
Top with garlic and chilli slices, and squeeze the juice from the ends
of the lemons over the fish. Arrange lemon slices on top of fillets.
Carefully seal all edges of the foil to form enclosed parcels. Place
parcels on baking tray.
