About this recipe:
This is a chilli recipe loaded with vegetables. Garnish with soured cream and grated Cheddar cheese, if desired.
Ingredients

2 (400g) whole plum tomatoes (tins whole plum tomatoe would be ok too)

1 (400g) tin chickpeas, drained

2 courgettes, thinly sliced

1 onion, chopped

2 carrots, sliced

2 stalks celery, sliced

1 red pepper, chopped

1 teaspoon chilli powder

1 green chilli, seeded and chopped

2 cloves garlic, minced

1 tablespoon dried oregano

2 teaspoons ground cumin

1 teaspoon salt

- In a slow cooker, combine all ingredients. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
